There should be a process for each iPod model to reboot it. (For mine, a several-years-old 30gb model, I have the toggle the Hold switch back and forth, then hold the center and Menu buttons until it reboots itself.)
Eventually, the freezes became so frequent that I restored my iPod to factory settings, to very good effect.
While not good that your ipod froze all the time, but good that it's not an uncommon occurrence. This is the first time it happened to me and I froze in shock on my bed near midnight.
When you restored it did you lose all your play counts and playlists?
Nope! It syncs the play counts and playlists every time you plug it into your computer, and after a restore (which is accomplished through a special button in iTunes), it copies all that info back to the iPod.
Rebooting the iPod might lose a recently-constructed On The Go playlist, or a few of the most recent plays, but nothing else.
